Why choose a parrilla?

When it comes to flavour, nothing comes close to an Argentinean wood-fired grill. At a pinch they can run on charcoal, but they are best fuelled by wood, which gives the food its distinct smoky taste.

Precise temperature control

Unlike a standard barbecue, the embers are managed separately in a brasero, allowing for control of the flame and even results. The distinct V-groove grills channel oil away from the meat to prevent flare ups, while grill height is adjustable via winding wheel for precise temperate control.

It all adds up to an emphasis on slow cooking, creating flavours that ordinary barbecues often struggle to achieve.
